Prim and Proper

In celebration of Mother’s Day I felt like I needed a very pretty cocktail! One that makes every mother feel so so special. After all, if I was handed this drink come Sunday (hint, hint husband), I would feel extremely special! Bonus, it’s pretty much a fruit plate inside a cocktail so you can nourish your body while getting a little buzzed.

This cocktail is so simple and so good! It’s slightly sweet, super fresh, and nice and crisp. It’s a drink I will be going back to for multiple occasions!

Recipe

Ingredients:

1 cup water

1/2 cup granulated sugar

1/2 cucumber, chopped into large pieces

4-5 mint leaves

1 bottle of chilled Rose

1 bottle of chilled Sparkling Rose or Prosecco

Assorted fresh fruit

To make:

In a small sauce pan, combine water, sugar, cucumber and mint leaves. Simmer on medium-low heat for about 10 minutes or until the sugar is dissolved and the liquid cooks down a bit. Remove from heat and let cool for about an hour. Remove the cucumber and mint and transfer the liquid to an airtight container and let chill in the fridge for at least an hour. You will not use all of this syrup so store it in the fridge for up to 3 months and use for other drinks.

Fill a wine glass about halfway with your choice of fruits and cucumber. Add 1 oz of the cucumber simple syrup.

Fill the glass halfway with Rose and top with bubbles of choice.
