Ricotta with Berries

This dish is inspired by this amazing brunch I had in Santa Barbara a few years back. It was so simple, yet elegant, and insanely good! Just homemade ricotta topped with berries and granola. It was honestly one of the best meals I had, like ever.

If you’ve never had ricotta as the star of your meal, then you need to change that, asap. It’s so creamy and rich yet light at the same time. Topped with berries and nuts, it’s truly one of the most satisfying meals you’ll have. Plus, it’s gorgeous so it’s the perfect recipe to make if you’re entertaining.

Recipe

serves 2-4

Ingredients:

1 cup homemade or store bough ricotta

1/2 cup strawberries, quartered

1/2 cup raspberries

1/4 cup blueberries

1 Tbsp honey

1 tsp lemon zest

1 tsp lemon juice

Pinch of salt

3 Tbsp crushed pistachios

Directions:

  1. In a large bowl add berries, honey, lemon zest, lemon juice, and salt. Stir together and let sit for 10 minutes.

  2. Spoon the ricotta onto a plate.

  3. Top with berries and pistachios.

  4. Serve and enjoy!
